1 box Lemon Supreme cake mix
2/3 c. canola oil
1 3 ½ oz. box instant lemon pudding
¼ c. lemon juice
4 eggs
½ tsp. lemon extract

Glaze:
¼ c. lemon juice
1 tsp. grated lemon zest
½ tsp. lemon extract
1 c. confectioners’ sugar

Directions:
Directions:
Preheat oven to 350°F. Prepare cake as directed and add instant pudding, set aside. In measuring cup, add lemon juice and enough cold water to make 2/3 cup. Add the eggs, lemon water and lemon extract to dry ingredients and combine. Pour in the oil and beat at medium speed for 6 minutes or until smooth. Lightly oil bundt pan, pour in mixture and bake for 45 minutes or until top is golden and cake is springy to touch. While cake is baking prepare glaze.

Glaze:
In small bowl, whisk lemon juice, zest, lemon extract and conf. sugar until smooth. Set aside. When cake is cool, invert and unmold. Using a poultry needle or toothpick, pierce top of cake with 1” deep holes. Spoon glaze over cake and cool. Serve with fresh berries.
