1 tbs butter
1 c thinly sliced red bell peppers strips
4 oz mushrooms, sliced
1 can condensed cream of chicken soup
10 oz frozen creamed spinach, thawed
2 c cooked chicken, chopped
1/4 tsp black pepper
5 oz fresh Parmesan cheese grated
6 servings hot prepared instant mashed potatoes
1 tbs fresh chive, chopped

Preheat oven to 375º. Lightly spray 8 X 8 or 11 X 7 pan with vegetable oil.

Slice mushrooms. Melt butter in frying pan over medium heat. Add pepper and mushrooms. Cook 1 minute. Stir in soup, spinach, chicken and pepper. Spoon into pan.

Prepare potatoes according to package directions. Add 1 c grated cheese. Fold in chives. Spoon potatoes over top of chicken mixture. sprinkle remaining cheese over top. Bake for 30-35 minutes.
