"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

Ingredients:
Sweet Potatoes
Packed brown sugar
Karo or Mrs. Butterworth's Syrup
Butter
Nuts (optional)
Marshmallows

Directions:
Directions:
Cook about 5 lbs of sweet potatoes until a toothpick can go through them, but not mushy. Let them cool and then peel and slice them. Layer them in a greased baking dish. Top them with approximately 3/4 cup packed brown sugar, maybe 1/4 to 1/3 cup syrup and about 1/2 cup melted butter. You can sprinkle nuts on top, but we don't in our family. But you can sprinkle some more brown sugar on top to give it a crunch. This can be made the day before and refrigerated. Best to take out of the refrigerator an hour or two before baking. Bake at 350º to 375º until hot and bubbly. Then add the marshmallows and bake about 5 more minutes, or until golden brown.
Another way to prepare the sweet potato casserole is to mash the peeled potatoes with an electric mixer and add the remaining ingredients. Then pour into a greased casserole. Follow same baking directions.
