1 lb. scallops, bay or sea
2/3 cup light cream or evaporated milk (not both)
1-2 tablespoons of Parmesan cheese
14/ cup margarine, melted
1/2 cup bread crumbs
1 cup crushed Ritz crackers
salt & pepper to taste

Directions:
Directions:
Rinse scallops and pat dry. Combine crackers, bread crumbs, margarine, cheese.
Grease 2 quart baking dish. Sprinkle 1/3 of crumb mixture in dish. Put 1/2 of scallops on top of crumb mixture. Sprinkle another 1/3 of crumb mixture over scallops. Remaining scallops are next layer. Pour cream on top. Then add remaining crumbs.
Bake 375º for 20-25 minutes.
