2 cups flour
1 cup sugar
4 whole eggs
8 egg yolks
4 cups milk
1/2 vanilla bean
1/2 cup (one stick) butter
3/4 cup finely cut candied fruit
2 tablespoons kirsch
10 stiffly beaten egg whites

Directions:
Directions:
Preheat oven to 350 degrees. Combine the flour, sugar, the whole eggs and three of the egg yolks in a saucepan. Bring the milk with the vanilla bean barely to a boil and pour it over the egg mixture, stirring rapidly. Stir until the sauce is thickened. Remove vanilla bean. Add the butter and remaining yolks. Cook briefly. Sprinkle the candies fruit with kirsch and fold in. Mix half the beaten egg whites into the mixture. Fold into the remaining egg whites. Butter two two-quart souffle dishes and sprinkle with sugar. Divide the mixture into the dishes and bake until well puffed-thirty to thirty-five minutes.

Mother's ending advice from her book, Special Touches for Decorating Food: "When presenting Souffle Rothschild, a delicious dessert flavored with kirsch and candied fruit, decorate the top with some glace'ed cherries and a sprig of mint for a dish that is equally as appealing to the eye as to the palate; that is the real reason for Special Touches for Decorating Food."
