2 4 oz. cans diced green chiles, drained and patted dry
3/4 C frozen corn, thawed and patted dry
1 C shredded cheddar cheese, pepper jack or other cheese
1 1/2 C non-fat milk
5 large egg whites
4 large eggs
1/4 tsp salt

Directions:
Heat oven to 400º and coat 8 6oz. or 4 10oz. ramekins with cooking spray and place on a baking sheet. Equally divide diced green chiles and corn among the ramekins. Top each with cheese. Whisk milk, egg whites, eggs and salt in a medium bowl until combined. Divide the egg mixture evenly among the ramekins and bake until the tops begin to brown and the eggs are set, about 25 minutes for the 6 oz. and 35 minutes for the 10 oz.
