2 c. Flour
1 1/2 tsp. Salt
3 oz. Water
1 Egg + 1 Egg White
1 tbls. + 2 tsp. Sugar
3 tbls. Olive Oil
1/4 c. Milk
8 oz. Blue Cheese, Crumbled
1/2 tsp. Cream of tartar

Red Pepper Mayo
2 c. Mayo
1 tbls. Dijon Mustard
1/2 Lemon Squeezed
2 oz puree pimentos

Directions:
Directions:
Separate eggs. Mound flour in a bowl and hollow the center. Put egg yolk, salt & olive oil in center. Add cold water and milk stirring gradually so no lumps remain. DO NOT OVER MIX. Add blue cheese, mix well. Beat egg whites and cream of tartar to stiff peaks. Add sugar. Add to batter. Refrigerate until ready. Fry 1 oz balls dropped from a spoon into oil at 350º. Fry until golden brown. Serve with mayo and garnish with parsley.
