1 pound fresh mushrooms
1/2 cup milk
2 1/2 tablespoons butter
2 1/2 tablespoons flour
1 tablespoon grated onion
1/4 to 1/2 tablespoon curry powder
1 tablespoon worcestershire
salt and pepper (and Sherry) to taste

Put mushrooms, stems and caps through food chopper, saving all juice. Drain mushrooms. To the juice add milk to make 1 cup of liquid. Melt butter and blend in flour. Add liquid and cook, stirring constantly until thick and smooth. Saute ground mushrooms in butter until tender. Add grated onions. Combine with cream sauce. Season with curry powder, worcestershire, salt and pepper to taste. Add a little Sherry. Cool. Spread on small toast squares and put in greased pan. Bake @ 400º until well heated. (A canapé (a type of hors d’œuvre) is a small, prepared and usually decorative food, held in the fingers and often eaten in one bite.)
