2 lbs. hamburger
1 medium onion
1 small bell pepper
1 tsp oregano
1 tsp basil
1-2 tsp. garlic powder
1/2 tsp. pepper (optional)
dash cayenne (optional)
2 slices of bread
1 cup ketchup
2 eggs

Directions:

Finely chop onion and bell pepper. Toast bread and then crush to small pieces or crumbs. While bread is toasting, put all ingredients in the bowl. After bread is prepared, add it to the bowl and mix all ingredients together. To test if it is ready to cook, make a small 2" ball, and squeeze the ball inside of a closed hand. If the meat squeezes out between your fingers, it is ready. If not, add a little ketchup, but just a little at a time. If it runs out of your fingers with almost the consistency of runny oatmeal you have added too much ketchup. I would add ketchup by 1 or 2 Tbsp. until it squeezes out of your fingers like playdough.

If you don't have a loaf pan, shape the loaf on a broiler pan. That will allow the grease to run away from the meatloaf instead of it sitting in it. Cook it at 375º F for 30 minutes. Add a layer of ketchup to the top of the meatloaf; return to the oven for 15 minutes. Meat is done when the temperature reaches 170º F.

Serve with mashed potatoes or scalloped potatoes, and your choice of a veggie or baked beans.
