1 c. shortening
1 3/4 c. sugar
1 tsp. vanilla
3 eggs, separated
1 c. cold water
1/3 c. pureed tomatoes
2 1/2 c. cake flour
1/2 c. dry cocoa
1 1/2 tsp. baking soda
1 tsp. salt

Directions:
Directions:
Preheat oven to 350º. Beat egg whites until they are stiff; set aside. Sift together flour, cocoa, baking soda and salt; set aside. Cream the following ingredients together, one at a time: shortening, sugar, vanilla, egg yolks, egg whites, water and tomatoes. Mix dry mixture into creamy mixture. Bake in two greased and floured 9-inch round pans for 35 - 40 minutes. Cool and frost with chocolate butter frosting. Top with strawberries if desired.
