2 qts water
8 skinless, boneless chicken breasts halves
salt/pepper/garlic for taste
2 tsp parsley
5 cubes chicken bouillon
3 tbls olive oil
1 onion chopped
3 cloves garlic choped
1 (16 oz) jar chunky salsa
2 (14.5oz) peeled and diced tomatos
1 can tomato soup
3 tbls chili powder
1 can corn
3 cans chili beans undrained
1 (8 oz) container sour cream
1 bag tortilla chips
2 to 3 cups sharp shredded cheese

1. In a large pot combine water, chicken, salt, pepper, garlic, parsley and bouillon cubes. Bring to a boin the reduce heat and simmer for 1 hour. Remove checken, reserve broth. Shred chicken
2. In a large pot, saute onion and garlic in olive oil and slightly brown. Stir in salsa, diced tomatos, tomato soup, chili powder, corn, chili beans sour cream, shredded chicken and 5 to 6 cups to chicken broth (saved from earlier). Simmer together for 30 minutes.
3. Crush tortilla chips in large pieces in a soup bowl and serve soup over chips
4. Top with cheese
