2 c. self-rising flour OR (2 c flour, 2 1/2 tsp baking powder, 1/8 tsp salt)
3/4 c. sugar
1 c. canned crushed pineapple with juice
2 eggs
2 T. vegetable oil
3/4 c. sharp cheddar cheese- grated
1/2 c. walnuts, chopped
1/2 tsp. pineapple extract

Directions:
Preaheat oven to 350º. Sift together dry ingredients. In separate bowl mix pineapple, eggs and oil. Add to dry mixture and mix well. Fold in remaining ingredients. Pour into greased loaf pan. Bake for about one hour. Cool and turn out bread from pan. Recipe courtesy of Paula Deen
