4 eggs
2 c. sugar
2 c. flour
2 tsp. baking powder
1 tsp. salt
1 c. hot milk
1/2 stick butter
1 tsp. vanilla

Directions:
Directions:
Mixing on low setting or by hand - beat eggs until foamy, add sugar mixing lightly. Sift baking powder, salt and flour together and then blend gently by 1/2 cups into creamed mixture. Add butter to hot milk and heat to 'just boiling'. Incorporate the milk mixture and the vanilla into creamed ingredients.

Pour into a 13 x 9" cake pan or 2 - 9" round pans and bake 30 - 35 minutes at 350º .

Frost with whipped creme, banana slices and/or strawberries slices, and coconut.

Or you can make a boiled frosting instead of using the whipped creme.

This is the only recipe that I found in Aunt Mable's hand writing! The one-layer cake seems to be the traditional version of the South. It's very much like a sponge cake. Scalding the milk gives it a distinctive flavor.
