2 c. sifted flour
2 tbsp. powdered sugar
1/4 tsp. salt
4 tbsp. melted butter
grated rind of 1 large lemon
2 whole eggs & 6 egg yolks
1-1/4 jiggers rum

In a large bowl blend flour, powdered sugar, salt, melted butter, and lemon rind. Whole eggs and yolks are beaten until frothy and then poured into a depression made into the mixture, rum is added and blended quickly. The dough is kneaded with a little additional flour until it does not stick to fingers and is smooth.

Small pieces of dough are pinched off one at a time, rolled about 1/8" thick and cut into strips about 8" long. These strips are then cut diagonally across, a 2" slit is cut into the center of each and one end of the strip is pulled completely through. Strips cut this way should not curl during frying. Strips are fried in hot oil until a pale brown color. Drain on paper towels and dust with powdered sugar. Cool and store.

This was Aunt Martha Mantych's recipe. It said that rum is used as a flavoring and prevents the oil from soaking into the 'cakes' while frying. Good Luck - save me one!
