3-4 loose cups of spinach (this will seem like a lot, but it cooks waaaay down)
3 cloves of garlic, pressed or minced
2 Tbsp olive oil
½ cup white wine

Directions:
Directions:
Heat the olive oil on medium in a large saute pan. When the oil is hot but not smoking, toss in the garlic and move it around constantly.

Once the garlic becomes fragrant (this will happen fast), drop all the spinach into the pan and begin to stir.

Once spinach begins to wilt just slightly, pour the white wine. The wine will help steam the spinach.

The trick to this one is not to cook it for too long. You want the spinach leaves to still be bright green when you take them off the stove. Be careful not to overcook, or the spinach will take on a bitter taste.
