2 cups sugar
3 cups flour
1 tsp. salt
1 tsp. cinnamon
1 tsp. baking powder
1 tsp. baking soda
1 cup oil
3 eggs
2 tsp. vanilla
3 cups grated apples (Cortland or Golden Delicious)
3/4 cup chopped walnuts
3/4 cup raisins or dates

Preheat oven to 350º F.

Combine all ingredients in large bowl. Pour into lightly greased (or spray with non-stick cooking spray) muffin tins - batter will be very thick. Bake 20-25 minutes at 350º.

To those who can't use 2-3 dozen muffins at once (I don't know anyone who fits this description): Increase baking powder to 3 teaspoons and store unused batter tightly covered in refrigerator. Use within five days.
