Ingredients: 3-4 medium Yukon potatoes 1/4 c. buttermilk (or more if needed to yield desired consistency) 1-2 tbsp. butter Add following flavors to taste: Horseradish sauce, sour cream, garlic granules, salt/pepper and at the end--chopped fresh cilantro

Directions:Potatoes can be any kind that mash well--red, russet, or Yukon. Wash potatoes. Leaving skin on, quarter each and boil in water for about 15 min. or until soft. I mash them (with skins on) with old fashioned potato masher. Transfer to Mixmaster --add buttermilk and butter first, followed by flavorings of your choice and mix. Chop about 3 tablespoonful fresh cilantro and mix in last. |

Notes: These can be made ahead and warmed in microwave at the last minute if needed. By using russet potatoes and baking them-- this recipe can be used to make twice baked potatoes. Bake until done; scoop out potato "meat", add above ingredients and refill shells. Return to 350 oven until warmed thru and slightly browned.
