For every 1 C. of Buttermilk called for in a recipe, place 1 Tbsp. White Vinegar in a 1 C. measuring cup and add milk to equal 1 C., stir. Let mixture sit for 10-15 minutes before using in your recipe.

I never buy Buttermilk and I throw milk out if it sours. When I need it for a recipe, I make my own.
