Chicken Bow Tie Pasta Recipe

12 oz. Bow Tie Pasta
4 chicken breasts
1 Can mandarin oranges (drained)
small red onion
About 4-6 sticks of celery
1/2 lb. red grapes
1 c. mayo (OK to use fat free)
1tsp. ginger
1 1/2 T. curry powder. (can use more or less depending on your taste)
2 T. soy sauce
2 T. brown sugar
1 can water chestnuts
Salt and Pepper to taste

Cook bow tie pasta (Pkg. direction) Cool, by running under cold water in a colander.
Boil chicken, cool and cut into bite size pieces.
Chop red onion and celery into very small pieces (I use my Pampered Chef chopper)
Chop water chestnuts
Place everything in large bowl, set aside

Mix with a wire whisk, mayo, ginger, curry powder, soy sauce, salt and pepper, and brown sugar until smooth. Add to pasta mix and stir well. If you like more mayo go ahead and add it.

Wash grapes and stir in.

Carefully stir in mandarin oranges last, they tend to get mushy.

Best left overnight in refrigerator, even better a couple of days later.
