2 lbs frozen or fresh chicken breasts
1 brick cream cheese
1 can black beans
1 can corn
16 oz or more of salsa

Place all items into crockpot and set on high. Cook 4-5 hours. Pull chicken out and shred it. (I like to throw it in my Kitchenaid mixer with paddle to shred it quick and easy.) Replace chicken in crockpot and set temp to low, continue to cook another 1-2 hours. Mixture will thicken as it stands. Serve in tortillas or with chips. For extras add cheese, sour cream, more salsa, or any other sides to make it more flavorful.
* The amount of chicken can be adjusted for the size of family. Add more or less of the individual ingredients depending on desired taste. The flavor of salsa also has a big impact. I like a salsa casera which is a bit spicy, but I've also used a Mango Peach chipotle. Mix and match what your own tastes are and you can't go wrong.
