salt and pepper

Zatarains Cajun Seasoning
corn starch

Directions:
Directions:
Sprinkle loin with garlic powder, salt and pepper, spray loin with Pam. Wrap bacon- secure with toothpicks 2" apart. Sprinkle loin with Zatarains Cajun Seasoning. Spray with Pam. Cook in foil on grill or in roaster pan in oven. For gravy, mix corn starch with water slightly thickened, pour into loin broth, let thicken.

Someone brought this when Aunt Janet passed away. It was wonderful and I asked for the recipe. I prepare my loin and seal tight in tin foil place in roaster pan and bake at 300 degrees for about 3 hours. I also have cooked it about an hour, cut off the oven and leave it in the oven overnight. In the morning , turn the oven back on and finish cooking. I find this produces a very tender roast.
