2 c. white corn syrup
1 c. sugar
2 tsp. cream of tartar
4 T. butter
1/2 tsp. soda
1 tsp. vanilla

Pop the corn ahead of time or while mixture is cooking, store it in a grocery bag. Remove all unpopped kernels.

Put syrup, sugar and cream of tartar in a large saucepan and cook at medium to high, to the softball stage. Use a candy thermometer; this is somewhat critical. If you remove from heat too early, the balls will not stick together, if removed too late, they get to hard. Stir occasionally. Remove from heat, add butter, soda, vanilla and food coloring, and stir well. Stir until mix just starts to thicken.

Fill roaster pan about 2/3 full with popcorn. Pour the mix onto the popcorn, moving back and forth to hit all the top layer of popcorn. Now, mix the corn with a wooden spoon, turning, mixing and scraping bottom of pan, until all the popcorn has some mix on it. Wait until mixture is tacky: then you are ready to shape the balls. I wear disposable latex gloves, ( one pair per batch). To avoid mixture sticking to hands, I lightly butter hands/gloves. Place balls on a sheet of wax paper to be wrapped with saran wrap after they are completely cool.

This makes about 12 to 15 medium sized popcorn balls.
