1 c. salad oil
6 tbsp. rice vinegar
1/4 c. sugar
1/2 tsp. pepper
2 3 oz. pkg chicken flavored ramen noodles
4 c. finely chopped cooked chicken, about 3 whole medium chicken breasts)
1/2 of a medium head of cabbage, shredded, about 4 cups
3/4 c. toasted sliced almonds
1 small onion, chopped
1/4 c. toasted sesame seeds

In a small bowl, whisk together oil, vinegar, sugar, pepper, and seasoning packets from noodles. Set aside. In a large saucepan, bring a large amount of water boiling. Add noodles. Cook 2 to 3 minutes or until just tender. Drain and transfer to a large bowl. Pour 1/4 cup of the oil mixture over ramen noodles and toss to coat. Add chicken, cabbage, almonds, onion, and sesame seeds to noodles and mix well. Pour remaining oil mixture over ingredients in bowl and toss to combine. Cover and chill for at least 2 hours. Could make the day ahead.
