2 Tbsp. cornstarch
3/4 cup water
1 tsp. freshly squeezed lemon juice
4 cups fresh blueberries (not frozen)
1 Tbsp. butter
3/4 cup sugar
pinch of salt
1 baked 9" pie shell
3/4 cup heavy cream
1 Tbsp. confectioner's sugar

Directions:
Directions:
Mix together cornstarch, 2 Tbsp. water and lemon juice in a small bowl. Stir until thoroughly dissolved.
Place berries (1 cup) and remaining water in medium saucepan over medium to high heat and bring to a boil.
Cook, stirring until thick and clear (2 minutes).
Fold remaining berries into cooked mixture and pour into baked pie shell. Refrigerate.
Just before serving, whip heavy cream and sugar and spread over top of pie or serve on the side.
