1 lb. sifted confectioners sugar
3 egg whites (room temperature)
½ teaspoon cream of tartar

Directions:
Directions:
Beat egg whites until foamy. Add cream of tartar. Beat until firm and shiny but not dry. Gradually add sugar.

As you use the icing, keep it covered with plastic wrap to prevent hardening. Keep unused icing in refrigerator covered with plastic wrap.
