3 cups carrots, grated
2 ¾ cups flour
2 cups sugar
2 tsp cinnamon
2 tsp baking soda
2 tsp baking powder
1 tsp pumpkin pie spice
½ tsp salt
1½ cups oil
4 eggs, beaten
¼ cup water
1tsp vanilla
½ cup pineapple, crushed, drained (optional)

Icing:
1 box 10x sugar
1 stick butter, softened
2 tsp vanilla
1 (8 oz) cream cheese

Directions:
Directions:
Mix together dry ingredients. Make a well and add carrots and oil; mix. Add eggs, water and vanilla. Bake at 350 for 30-40 minutes in a 9x13 pan. Frost cake when cooled
