12 oz chicken breasts, boned, skinned and cut into 1-
3 Tbsp fresh lime juice
½ cup, plus 1 Tbsp peanut oil, divided
2 Tbsp soy sauce, divided
1 Tbsp fresh ginger, minced
¼ tsp crushed, dried red pepper
2 cloves garlic, crushed
6 oz fresh snow peas, trimmed
12 oz bow tie pasta
1 tsp sesame oil
½ tsp salt (or to taste)
¼ cup whole green onions, thinly sliced
1 tsp sesame seeds, toasted 10 seconds in hot skillet
1 Tbsp fresh cilantro leaves (optional)

one hour before cooking: In bowl, place chicken, 1 Tbsp lime juice, 1 Tbsp peanut oil, 1 Tbsp soy sauce, ginger, red pepper and garlic; toss well to combine. Cover; refrigerate at least 1 hour. Meanwhile, steam snow peas about 3 minutes. Rinse with cool water; set aside. Cook bow ties in plenty of salted water until al dente. Drain; rinse with cool water; drain again.
Make dressing: Whisk together 1/3 cup peanut oil, 2 Tbsp lime juice, 1 Tbsp soy sauce, sesame oil and salt. Prepare hot fire in barbecue grill. After chicken has marinated, grill until browned and tender about 3 minutes per side; cool slightly. (Or cook in skillet over
medium heat, 3 minutes per side.)

Combine snow peas, bow ties, chicken strips, dressing, green onions, sesame seeds and cilantro. Let sit a few minutes to blend flavors; serve on lettuce leaves; garnish with ginger. For buffet meals, cut chicken into bite-sized chunks after grilling.
