1 Cup chopped dried apricots
1 cup boiling water
1 cup sugar
1/2 cup butter softened
1 cup sour cream
2 cups flour
1 tsp. baking soda
1/2 tsp. salt
1 T. grated orange peel
1 cup chopped nuts

Directions:
Directions:
Soak chopped apricots in water for 5 minutes. Cream sugar and butter until
fluffy; add sour cream and mix well. Combine dry ingredients. Stir into
cream mixture. Drain apricots and discard liquid. Fold in apricots, orange
peel, and nuts. Pour into greased muffin tins. Bake at 350* for 18-20 minutes
(You can use whole wheat flour, pecans, and real orange peel if you like. I also
soak apricots for longer amounts of time.)
