1 can black beans
1 can pinto beans
1 can small sweet peas
1 can Shoepeg corn
1 red pepper, chopped
1 orange or yellow pepper, chopped
6 scallions, chopped
2 cloves garlic, chopped
1 tbsp. parsley
few shots of Tobasco sauce
8 oz. zesty Italian salad dressing

Directions:
Drain and rinse all beans. Add all other ingredients. Add dressing and mix together. Refrigerate overnight and serve with scooped Fritos or tortilla chips.

Feel free to make substitutions - adding garbanzo beans, more colored peppers, cilantro instead of parsley. One bottle of dressing is a lot so add more of everything for a big crowd or only use half of the dressing.
