1 lb. mild Italian sausage
1 large onion chopped
2 cloves garlic minced
1 large eggplant cubed
1 large tomato chopped
1/4 lb mushrooms sliced
1 tsp. sweet basil leaves
1 egg
4 large red or green bell peppers or 2 of each.
1/2 cup shredded cheddar cheese
1/2 cup Mozzarella cheese

Directions:
Directions:
Remove casings from sausage crumble into large heavy pan over medium heat and cook until light brown and onion and garlic and cook until limp. Stir in eggplant, tomato and mushrooms, basil, cook until tender. Stir in 1/2 cup shredded cheddar cheese and egg beaten.

Cut bell peppers in half lengthwise remove stems and seeds and arrange in greased 9x13 pan. Evenly fill peppers with vegetable, sausages mixture. Cover with foil or casserole cover and bake at 400 degrees for about 40 minutes uncover-top with 1/2 cup mozzarella cheese and bake 10 minutes longer.
