4 1/2 pounds apples
4 1/4 cups gelling sugar
1 large handful of fresh mint
8 leaves of rose geranium

Wash and thinly slice the apples. Place in large saucepan and cover with water. Cook over low heat for 20 min, until apples are tender. Strain through cheesecloth or a fine-mesh sieve and let drain over a bowl for 30 min. Measure the juice obtained to determine how much sugar you need. Wrap the geranium leaves together. Add to the pot with the apple juice and sugar. Bring slowly to a boil, stirring well. Let cook for 30 min, then remove herbs. Pour jelly into 2 sterilized jars and seal immediately.
