1 cup whole wheat floor
1/2 cup unbleached white flour
2 T Flax seeds
1 t. baking soda
1 1/2 t cinnamon
10 T. butter
1/4 cup sugar (optional)
3/4 cup brown sugar
2 eggs
3-4 ripe bananas, mashed (1-1/4 cups)
1/2 c milk
1/4 cup yogurt
1 cup shredded coconut
2 cups cranberries

Preheat oven to 350º. Grease 3 small loaf pans. Sift the flour and baking soda together. Cream the butter and sugar until light and fluffy. Add eggs, one at a time beating until the mixture is smooth. Stir in bananas, yogurt and milk. Add the dry ingredients and coconut. Mix until blended. Stir in 1 cup fresh cranberries. Spread batter into the 3 miniature pans and top with remaining cranberries. Bake for 45 minutes. The bread is done when a skewer/toothpick inserted into the center of the loaf comes out clean and the bread is golden brown.

Note: you may substitute chopped nuts for the coconut.
