5 large garlic cloves, chopped
1 large onion, chopped
2 red peppers, chopped
1 green pepper, chopped
1 yellow or orange pepper, chopped
1-2 cans whole peeled tomatoes
1 can diced tomatoes
1 can black beans, drained
1 can red kidney beans, drained
1 can white beans, drained
1 can tomato paste
3 T chili
salt
pepper
olive oil

* A winter alternative is to add 2 cups diced butternut squash, 1 T ground cumin, 1 teaspoon dried oregano, preferably Mexican oregano when you add the beans.

1/2-3/4 lb. Ground beef (optional)

Place garlic, onion and all peppers in a large pot. pour enough oil to thoroughly cover the vegetables. Add salt & pepper. Cook until onions start to turn translucent and the peppers become slightly tender.

* To make meat chili, add the ground beef and stir until the meat browns.

Add the cans of tomatoes. Let this get hot, then add the drained cans of beans. Salt & pepper to taste. Sprinkle chili, almost covering the entire surface. stir in and continue to season to taste.

**If the chili is too thick add water and then add 1/2-all of the tomato paste. If the chili is too watery just add paste.
