4 chicken breasts with skin (can substitute with dark meat)
garlic cloves
1 medium onion
4 bay leaves
1/2 c soy sauce
1/4 c vinegar
1/4 c water (or chicken stock)
1 small jar of pimientos
1 T cinnamon
pepper to taste

Directions:
Directions:
Put the chicken in a covered boiler. Cut up garlic and onions and put in boiler on top of chicken. Add soy sauce, vinegar and water. Bring liquid to a boil and reduce heat to low. Add pimientos (drained), bay leaves, and cinnamon. Cook for about 45 minutes or until chicken is completely cooked. Serve over wild rice.
