2 1/2 lb. chicken
16 oz. sour cream
2 cans cream of chicken/mushroom soup
1-2 cans Rotel tomatoes
2 c. shredded cheddar cheese
16 large. tortillas

Directions:
Directions:
Brown chicken cut up in bite size pieces. Mix together sour cream, soup, tomatoes, and cheese. Put 1/2 of this mixture with the chicken and save the other half to pour over enchiladas before baking. Take spoonfuls of chicken mixture and put in tortillas wrap up and lay in rows in 9 by 13 pans. Be sure to grease pans. You will fill about 16 depending on how full you make them. When finished pour rest of soup mixture over top and bake at 350º for 30 min.
