2 pkg. active dry yeast
2 c. warm water (about 110 degrees)
1/4 c. butter, melted
1 tbsp. salt
3 1/2 c. whole-wheat flour
1/3 c. honey
3 to 3 1/2 c. unbleached flour or all-purpose flour

Directions:
Directions:
In a large mixing bowl, combine yeast and water. Stir to dissolve yeast. Stir in melted butter and salt. Add the whole-wheat flour and mix well. Let mixture stand for 3 to 5 minutes. Stir in the honey. Stir in as much unbleached flour as you can. Turn out onto a floured surface and knead in enough remaining flour to make a stiff dough that's smooth and elastic (8 to 19 minutes).

Place the dough in a greased bowl. Cover, let rise until doubled (about 45 minutes). Divide dough in half; shape and place into two greased loaf pans. Cover and let rise to nearly double (45 minutes). Bake in a 350º oven for 45 to 50 minutes or until done. Cover with foil the last 30 minutes if necessary, to prevent overbrowning. Remove from pans and cool on wire racks. Brush tops with additional melted butter while warm.
