1/3 lb. thickly cut pastrami cubes.
For salad:
1 8 oz bag of romaine lettuce
1 cup cherry tomatoes
1/2 lb. fresh button mushrooms, sliced
1/2 red onion thinly sliced
1/4 cup black olives
1/4 cup canned or prepared chick peas
mini garlic bagel chips, crushed
Avocado , diced (optional)
Cucumber, diced (optional)
Red bell pepper, diced (optional)
Dressing:
1/3 cup mayonnaise
2 - 3 Tablespoons unsweetened plain soy milk
1 clove garlic, crushed
salt
ground black pepper

Salad:
Heat medium sized skillet over medium heat. Add pastrami cubes and cook until outside is crusted (about 10 minutes). In a large bowl, layer romaine lettuce, pastrami, tomatoes, mushrooms, red onion , olives, chick peas, bagel chips (if using the optional items you can add them now).
Place mayonnaise, soy milk and garlic in blender. Blend until smooth. Season with salt and pepper to taste. Pour dressing over salad right before serving, toss to coat.
