Ingredients:
Ingredients:
4 boneless pork chops, cut into strips
2 tbsp. olive oil
1 clove garlic, minced

Sauce:

4 tsp. olive oil
8 tbsp. dry sherry
8 tbsp. soy sauce
4 tbsp. brown sugar
1/2 tsp. crushed red pepper (I use the McCormick Red and Black pepper)
4 tsp. cornstarch
4 tbsp. water

Directions:
Directions:
Heat oil in skillet. Brown pork strips on all sides. remove and add a little more oil if necessary. Saute garlic for 1 minute, being careful not to burn it. Combine the oil, sherry, soy sauce, brown sugar and red pepper. Place pork strips back in skillet. Pour sauce over them. Cover tightly. Simmer over low heat until pork is tender, about 30 to 40 minutes. If liquid gets too low, add a little water. (My electric skillet has a hole in the lid to let steam escape, so I had to keep adding water.) Stir the pork strips occasionally while cooking. Stir corn starch in water to dissolve. Stir enough of the mixture into the strips to thicken. Serve over egg noodles tossed with butter.

Personal Notes:
Personal Notes:
The original recipe calls for the chops to remain whole and says to pound them to 1/4 inch thickness. I cut mine into strips before cooking.
