3 c. shredded carrots
2 c. sugar
1 c. olive oil
1 tsp. salt
2 c. flour
2 tsp. cinnamon
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. ground nutmeg
1 tsp. vanilla
1 c. shredded coconut
1 c. chopped pecans
4 eggs

Directions:
Directions:
In large bowl mix all dry ingredients. Add carrot, vanilla, coconut, pecans, eggs and oil and mix well. Grease and butter bundt pan and add cake batter. Bake at 350º for 45 minutes or until toothpick inserted comes out clean. Cool on cake rack for 20 minutes and then serve.
