2-4 lb package Corned beef
1/3 cup brown sugar
1/2 cup drinking Sherry
1 tbsp prepared mustard

Directions:
Directions:
Follow the directions on the package for cooking the corned beef except after simmering for 1 1/2 hours, remove the corned beef from the stock and drain well and place in a shallow roasting dish or pan. Mix the brown sugar, Sherry and mustard well and pour over the meat making sure the entire roast is covered. Place uncovered in a preheated 350º oven and bake for an additional 30-45 minutes until meat is tender. Baste the meat with it's own juices once while baking.
