1/2 c. butter
1 c. sugar
2 eggs
2 tbsp. buttermilk
2 c. flour
1/2 tsp. salt
1 tsp. baking soda
2 c. chopped crabapple, skins on but stems and seeds removed
1/2 c. nuts (optional)
1/2 c. candied orange slices, diced

Directions:
Directions:
Cream butter and sugar
Add eggs and buttermilk
Mix dry ingredients together and add to butter, sugar, egg and buttermilk mixture.
Fold in crabapple, nuts, and orange slices
Bake at 350º F for 45-50 minutes, or until done, in a greased and floured loaf pan(s).
If desired, you can top with a mixture of with 1/2 c. brown sugar, 1 tsp. cinnamon, and 2 tbsp. butter 15 minutes before done baking.

For buttermilk substitute mix 1/2 cup milk with 1 1/2 tsp. vineger or lemon juice. Spoon out the 2 tbsp. and discard the rest.

Candied Oranges: Mix 1 1/2 cup of water with 1/2 cup granulated sugar and heat to boiling. Add 1 navel orange sliced crosswise 1/4" thick. Cook stirring constantly over a moderate heat until liquid is reduced to thin syrup and the orange slices are translucent, about 20 minutes. Reduce heat and simmer until syrup is thick and slices are tender but still intact, about 10 minutes. Cool slices on a rack. Chop and add to recipe.
