4 c. carrots sliced
1 medium onion
3 tbsp. butter
1 can cream of celery soup
1/2 tsp. salt
pepper to taste
1/3 c. Velveeta cheese sliced
herb flavored croutons
1/2 c. melted margarine

Directions:
Directions:
Cook carrots in boiling water until crisp and tender. Saute onion in butter and combine with carrots, undiluted soup, salt and pepper. Place in baking dish. Top with croutons tossed in melted margarine. Bake in 350º oven for 30-45 minutes.
