Ingredients: 6 large eggs 1/4 c. milk 1 small onion 1 bell pepper 1 lb. lean ground beef 3 large potatoes 1 tbsp. salt 1 tbsp. pepper 1/2 tsp. garlic salt or powder 1/2 tsp. parsley Dash of oregano

Directions:Preparing Meat: Dice onion and bell pepper into fine pieces. Sprinkle half the salt and pepper over the meat. Sprinkle parsley and garlic over meat. Mix all together until evenly distributed. Roll meat into a ball and place into a non-stick cake pan. Press meat in pan and cover the bottom of pan completely with a little coming up the sides. Prepare potatoes: Put 1/4 c. vegetable oil in large skillet and heat. Sliced potatoes thinly and place slices into hot oil. Cook until edges of potatoes are lightly brown (medium done) and remove from heat. Place potato slices on paper towel and let excess oil drain. Take drained slices and place in cake pan in even layers over beef. Prepare eggs: Take 6 large eggs and place in large mixing bowl. Pour milk over eggs. Sprinkle with remaining salt and pepper. Sprinkle some oregano and parsley lightly over top. Whip eggs until fluffy. Pour over potatoes and ground beef. Set oven to 350º and bake for 20 to 25 minutes. Eggs will rise above pan top and form a mushroom top. |
