2 med carrots
1 med zucchini
1 T olive oil
1/2 C canned or frozen corn
1/2 15 oz can black beans
1/8 t salt
1/2 t black pepper
4 oz low-fat cheddar cheese
12 8" whole wheat flour tortillas

Directions:
Directions:
Preheat oven to 325. Rinse zucchini and carrots. Peel carrots and dice both to med dice. Heat oil in large saucepan and saute carrots till semi-soft, about 5 minutes. Add zucchini and corn to pan and cook till tender. Drain and rinse black beans, adding half to vegetable mix. Stir to combine.
Season with salt and pepper and add rinsed and chopped cilantro. Spread 4 T of vegetable mixture on each of 6 tortillas. Top with 2 T cheese and another tortilla. Bake on pizza pan (preferably with holes) till cheese melts..about 7 minutes. Cut in to wedges and serve immediately.
