6-8 medium sized green peppers
1 small onion chopped fine
1 1/2 #s of hamburger
1 egg beaten well
1/2 cup ready to use rice
1 tsp salt
dash of pepper
1 can tomato soup
1/2 can water

Directions:
Directions:
Wash peppers and cut a thin slice from the stem end to clean out seeds. Brown burger with onion, salt and pepper. Drain burger mixture, mix with rice and egg then fill the peppers. Place peppers in a greased casserole dish. Mix tomato soup and water together and pour over the top of the peppers. Bake for 30-45 minutes in a 350 degree oven.

Often times, mom would make these before work and cook them on low in the crockpot so they would be ready for the noon meal.

Other variations might include adding diced, stewed or rotelle tomatoes to the meat mixture. Some will also add mozzarella to the top of the meat mixture in each pepper.
