3 mashed up ripe bananas
2 eggs
1 Tbl. of vanilla bean paste (or 2 Tbl. regular vanilla)
1 cup sugar
1/4 cup canola oil
1 heaping tsp. baking powder
1 heaping tsp. baking soda
dash salt
1.5 cup flower (unbleached whole wheat)
1/2 cup flaxseed meal from Trader Joe's
1/2 cup almond meal from Trader Joe's
1/4 cup milk (buttermilk also good)
1/3 bag of chocolate chips

Directions:

Mix all well except milk and chocolate. Add milk and more if necessary to thin batter. Stir in chips.

Pour batter into loaf pan coated with nonstick spray. Sprinkle a layer of sugar in the raw on the top. Bake 60 minutes or more in a 350º oven

Variables: Macadamia nuts, walnuts or pecans, cinnamon, nutmeg. Or substitute tiny apple chunks or applesauce for chocolate. Mini chips work better than regular ones.
