1 onion, chopped med dice
1 carrot, chopped med dice
1 t chopped garlic
1 16 oz can petit-diced tomatoes, drain and reserve juice
1/2 C lentils
1 C chicken broth or water
1 bay leaf
1 t curry powder
1 t dried thyme
1/2 t cumin

Directions:
Directions:
Cook onion, carrot, and garlic in reserved tomato juice over med -low heat about 4 minutes. Rinse and pick over lentils. Add lentils and spices to the onion mixture. Cover and simmer over low heat till lentils are tender...about 30 minutes. Chec once or twice to make sure the liquid hasn't all been absorbed...add more if necessary.

Lentils are a great source of protein and cook fairly quickly for legumes. This recipe has no added fat, and under 200 calories a serving.
