1 large onion, chopped
1/2 medium green pepper, diced
1 clove garlic, finely diced
2 tablespoons olive oil
1 pound fresh shrimp
1 cup uncooked white rice
2 cups chicken broth or stock
1 teaspoon salt
pepper to taste
hot pepper sauce to taste
1 bay leaf, crumbled
1 16 ounce can whole tomatoes
1/2 pound cubed, cooked Andouille sausage

Directions:
Directions:
Saute the onions, green peppers, and garlic in the oil, in a dutch oven, for 3 minutes. Add the shrimp. Cook and stir until tender, about 5 minutes. Remove this mixture from the pan and set aside.

Saute the rice in the remaining oil for about 10 minutes, to brown lightly. Stir in the chicken broth, seasonings, and tomatoes. Cover and simmer until the rice is cooked, about 15 minutes. Add the shrimp mixture and the sausage and stir. Cover and heat through.
