1 6-oz package corn read stuffing mix
1/2 cup water
1/2 cup thinly sliced celery
1 8 ounce container soft cream cheese with chives and onions
1/2 cup halved cranberries
1/4 cup coarsely chopped pecans
4 Cornish Hens (1-1 1/2 pounds)
1 tablespoon oil

Directions:
Directions:
Combine the seasoning packet from the stuffing mix, water, and celery in a large saucepan. Bring to a boil. Cover, reduce, and let simmer 5 minutes.
Add 1/4 cup cream cheese, stirring well. Stir in the stuffing mix, cranberries, and pecans. Remove from heat and let set 5 minutes
Loosen skin from the birds and put remaining cream cheese underneath. Stuff birds with stuffing. Brush with oil.

Bake at 350º for 1 hour, or until done.
