4 chicken thighs or breasts
1/4 teaspoon salt
1/8 teaspoon allspice
1/8 teaspoon ground red pepper
1 tablespoon olive oil
3/4 cup mixed lentils
3 scallions, cut in1-inch pieces, diagonally
4 large dried peaches, sliced into strips
1/2 cup dried cherries or cranberries
2 teaspoons crystallized ginger, finely chopped
1/3 cup chopped fresh cilantro
1 1/3 cups chicken broth
4 teaspoons lemon zest
1 tablespoon lime juice

Directions:
Directions:
Season the chicken with half of the salt, allspice, and pepper. Heat the oil in a dutch oven, and brown the chicken 5 minutes on each side. Remove from pan and set aside.
Add lentils, peaches cherries, ginger, scallions, half the cilantro, and the remaining seasonings. Cook, stirring, 2 minutes. Add the broth.
Return the chicken and bring to a boil.
Bake, covered, at 350º for 35 minutes. Uncover and cook another half hour, or until lentils are cooked through. Stir in lime juice.

Sprinkle servings with remaining cilantro and garnish with lime wedges.
